Yes, this course is right for you. I will guide you step by step through the entire process from identifying plants in the field to preparing them in the kitchen. We'll go slowly so you can grasp the content from beginning to end. The PDF resource guides that accompany each lesson are there to support your learning process as well.

In this course I share with you my 30+ years of accumulated wisdom regarding foraging, wild food cooking and medicine-making. Some of this may be review for you, however I do hear from experienced students that this course expands their expertise on the subject. If you have specific questions, please let me know.

What plants do you cover in this course?
In the field we cover dandelion (Taraxacum officinale) and field garlic (Allium vineale). We also look at dandelion's look-alikes: two species of wild lettuce and chicory; and we look at field garlic's poisonous look-alikes: Star of Bethlehem and Crocus.
In lesson three of the kitchen apothecary we feature dandelion, marshmallow (Althaea officinalis), calendula (Calendula officinalis) and echinacea (Echinacea angustifolia).
What part of the world does one find the plants you cover in this course?
The two plants I focus on in the field are wild, abundant and very common throughout the world.
In the apothecary lesson, we do not forage for the herbs, but they can be wildcrafted, garden grown, or purchased.
Are the recipes vegan or vegetarian? I am on a restricted diet. Will I be able to make these recipes?
For the most part, the food recipes are formatted as master recipes so you can adapt them to suit your dietary needs. Frequently, you can make them vegan, vegetarian, dairy-free etc. Although in some cases, as in the Herbed Butter, you will need butter.
What if I can't forage, can I still make the recipes?
Yes, in most of the recipes I give you cultivated (store bought or homegrown) substitutes. That is the beauty of the master recipe format.

Yes, in most of the recipes I give you wild plant substitutes. That is the beauty of the master recipe format. It offers you a template to get your creative cooking juices flowing with whatever plants you have at hand.
